We usually eat one pe...Artichokes are very french. We usually eat one per person. We put ours in a pressure cooker and cook for about a half an hour. If it's in a covered pot then it's more like 45 minutes to an hour with water on bottom of the pan, enough that won't run out but it doesn't have to cover the artichokes. When the leaves come off easily it's ready. You don't have to trim the entire stem off because it's as good as the heart. You can leave about a half inch.<br /><br />For the sauce, we put about a tablespoon of dijon mustard and about 4 tablespoons of olive oil. You can put a splash of balsamic vinager.
