Making Dinner Simple

We eat dinner together as a family every night. Sometimes Thomas is home early in the evening, but usually he works until it is dark. I can't have dinner ready when he gets home, because it is different every day. Now that spring has arrived (even though I know it doesn't fell like spring for most of you), the days are longer, and our dinner hour can be very late.

This is why frozen meals are perfect for us. I pull them out of the freezer when Thomas comes home, and dinner is on the table in twelve minutes. Plus everyone gets to eat something they like, which makes dinner nice for picky eaters (like me - I'm the picky eater in our family).

When I was a kid, my family ate frozen meals. I remember going shopping with my mom, and there were few choices - none of them very tasty. In the years since then, frozen meals have come a long way.   1. I'll may have to give these a try. I have a hard time finding frozen foods that taste like the original thing... perhaps because I keep them frozen for too long.

    1. The freshness of the frozen meal really does make a difference. I try not to leave them in my freezer for more than a week or two.

  2. I have some Healthy Choice on hand for crazy busy nights but my kids prefer pbj, soup etc.

    1. My daughter goes back and forth - sometimes she wants the frozen meal, and sometimes she wants the soup or sandwich.
